Potato and Bacon Salad in Herbs

Ingredients

  • 180g of streaky Voodoo Bacon

  • 1kg of dutch cream or waxy potatoes

  • ¼ bunch of chopped parsley

  • ¼ bunch chopped mint

  • ½ bunch chopped spring onions

  • ½ diced red capsicum

  • 4 tablespoons of aioli or mayonnaise

  • Salt and pepper

Method

  1. Steam or boil potatoes until tender

  2. Cook and dice Voodoo Bacon, and toss in potatoes

  3. Add in fresh herbs, spring onion, capsicum and aioli/mayonnaise

  4. Toss together

  5. Season to taste

  6. Bon appetit!
