Cheese-stuffed Jacket Potatoes with Cheese and Bacon

Ingredients

  • 4 baking potatoes

  • 100g Voodoo Bacon chopped

  • 1 garlic clove, crushed

  • 80g mature cheddar, grated

  • sour cream to serve

  • chopped spring onions to serve

Method

  1. Heat the oven to 180/200C (fan-forced/non-fan forced). Wrap potatoes in foil and bake until soft.

  2. Cook chopped bacon in pan and add crushed garlic.

  3. Cut cross in top of potatoes and split open, then stuff with bacon mixture and top with grated cheese.

  4. Bake for 15-20 minutes until cheese is bubbling and golden.

  5. Top with chopped spring onions and sour cream.
