Bacon Stuffed Potatoes
Ingredients
4 large potatoes
2 tbsp. extra-virgin olive oil
2 tbsp. melted butter
1/2 tsp. paprika
Kosher salt (or regular salt)
Freshly ground black pepper
6 slices streaky Voodoo Bacon, cut into 5cm pieces
75g grated Parmesan cheese
Method
Preheat oven to 210°C. Make small cross-cuts in each potato; don’t cut the whole way through. Place potatoes on an oven pan.
In a bowl, whisk together oil, melted butter and paprika and season with salt and pepper. Brush all over potatoes.
Insert a piece of bacon into each cut, then sprinkle potatoes with Parmesan cheese. Bake until potatoes are tender and bacon is crispy, about 45 minutes, brushing with remaining butter mixture halfway through if desired.
Garnish with spring onions before serving.
